This is seriously one of the best summer salads. You only need a few ingredients and all but one can be found at @traderjoes. @louveganjerky gifted me these bacon bits and I was excited to use them in this recipe.


TJ’s frozen roasted corn (whole bag)

Vegan mayo of choice (I used TJ’s)

Cherry tomatoes (big handful)

1/2 red onion

@louveganjerky bacon bits

Salt, pepper, and dried dill (essential!! So good with this)

1. Heat up a dash of avocado oil in a pan and add in the frozen corn. Toss it for about five minutes until it’s defrosted and cooked.

2. While this is cooking, slice the cherry tomatoes in half and chop the red onion.

3. Add the corn to a bowl and add in the tomatoes, onion, and a spoonful or two of the mayo (according to taste here).

4. Top the salad off with salt, pepper, lots of dill, and the @louveganjerky bacon bits.

*Feel free to swap the vegan bacon for real bacon if that’s more your style.
